On Valentine’s Day, we had the honor of being seated for a sexy prefixed dinner with Chef Graham House at Sovereign Remedies, a restaurant with a menu driven by relationships with local farmers and foragers.
In 2014, Charlie Hodge and his partner Sunil Patel opened the doors to this charming vintage and warm space in the New Medical Building in downtown Asheville, once serving as offices for doctors and dentists. From the 14 foot high windows to the regal decor, you’re ready to settle in and spend some serious time dining off their menu before you’ve even been served your first course.
For this special Valentine’s dinner, Chef Graham was serving seven courses, beginning with oysters and ending with a sexy sundae. If you elected to, they had the perfect wine to pair with each dish. If wine is not your thing, there is no shortage of choices from local brews to alcohol-free remedies.
As we began our palate adventure, our server Alex brought us oysters with bee balm, shallot and smoked heart of palm, served with the light and bubbly Raventos I Blanc Cava Brut Rose that paired so perfectly, it was hard not to finish both in an instant.
The next course featured an explosion of diverse flavors married together in such an unexpected way. The plate of roasted carrots, blood orange, popcorn and the most delicious torched whipped honey made us feel like we were already eating dessert. I assure you, this was the cleanest plate of the evening.
Beet Agnolotti was served next, bringing together pistachios and pink lady apple puree. Dining gluten free, this was one of the few dishes that didn’t match the other diners, yet it didn’t feel like I was missing a thing. Chef Graham and his staff made sure I experienced all the flavors and didn’t miss a beet, pun intended.
Our fourth course featured a light and smooth whole roasted Sunburst Farms trout with creme fraiche, roe, lemon, rosemary, and scallions. Paired with the citrusy white, Xion Albarino Rias Biaxas 2017 it was hard not to devour this entire dish. Thankfully, Alex offered to package it so we could enjoy the remaining entrees and suggested making an omelet with the trout in the morning, which we of course did!
The trout was followed with a foie gras mousse the was decadent and was served with a pumpkin almond seed bread that we simply couldn’t get enough of. The bread was gluten free, but you never would have known! The Matteo Correggia Piedmont this was served with complimented the mouse exquisitely.
Before heading to dessert, the final savory course was a bone in ribeye served with thyme jus, a popover, and marrow. I promise you, not a crumb of popover was left over after my gluten eating partner got his hands on it. The serving was also massive and leftovers were brought home.
We made sure to save room for the sexy sundae! Layers and layers of gelato, brownie bits, whipped cream, and pure perfection. Served with Quinta Do Infantado White Port, we were ready to head home and cuddle the night away.
